Excalibur Dehydrator

I don’t do a lot of dehydrating, but it’s a great tool to create varying textures and more intense flavors from time to time.  The Excalibur allows you to have excellent control of the temperature (to keep it raw and to control drying speed) and full 24-hour timing.   I have used at least a dozen different dehydrators, and Excalibur dehydrators are best in every category, hence I highly recommend Excalibur.

A few tips:

Always be aware that unless you are doing full dehydration (removal of all water, which we don’t recommend), the food on the trays will dehydrate at different rates.  The top and bottom trays will dehydrate the slowest, and then the food dehydrates more rapidly as you work your way to the middle tray from the top and bottom. Also, the food that is closest to the fan will dehydrate most rapidly.

Therefore you may want to change the position of the trays part way through dehydration to keep the food dehydrating evenly, and you may want to rotate the trays, even if they don’t change position, If you are happy with the food being ready at different stages, leave the trays as they are.

Most people who use dehydrators dehydrate their food 100%, so this is not an issue for them. Please note that not all dehydrators work this way.  It seems only raw foodists like to do partial dehydration!
