A beautiful favorite at the Washington State retreat this year. Served for “Dot Day” themed dinner.
Ingredients:
Nectarines (to desired volume)
Blackberries (handful)
Cucumber (1 or less)
Equipment:
Blender
Knife
Grater
Strainer
Vegetable peeler (optional)
Method:

- Wash ingredients. Blend or press blackberries, strain out seeds, and set aside.
- Peel cucumber if desired, grate for garnish, and set aside.
- Remove nectarine pits and blend until smooth.
- Pour nectarine soup into bowl(s).
- Ring the soup with small dots of the blended and strained blackberries as pictured.
- Sprinkle grated cucumber in center for garnish. Serve and enjoy.
