Orange Cashew Dressing

This is a favorite salad dressing in my house.

It's basically a handful of soaked cashews blended with orange juice or tangerines, until smooth.

Try it out tonight poured over your favorite greens and citrus segments.

Ingredients (Adjust amounts and proportions to taste):

1-2 oz cashews*, soaked
1-3 C orange juice or 4-6 small tangerines, deseeded
Salad to pour it on

Equipment:

blender
citrus juicer (optional)
serving dish, bowl, or other container

Directions:

    1. Soak raw cashews* in water ahead of time.

    2. Juice oranges (or other citrus) if using juice. If using tangerines, peel and deseed tangerines.

    3. Drain cashews and place in blender with juice and/or deseeded tangerine segments. Blend until smooth.

    4. If not serving right away, refrigerate until serving.

    5. Pour over you favorite salad and enjoy!


*There is some disagreement about whether raw cashews are actually raw, and which ones are more raw than others. We'll leave whether they are acceptable for your diet up to you.
