Favorite 2nd Course: Hearty Tomato Soup
Chef: Clarissa Clark
Ingredients
- semi-dry & fresh tomatoes (Roma or beefsteak)
- handful of fresh basil leaves (to taste)
- juice of 1/2 lime – 1/4 Haas avocado – 1 red bell pepper
- cucumber slivers (adjust quantity to appetite)
Method:
1. Blend tomatoes, basil, lime, avocado & bell pepper into a hearty sauce
2. Add cucumber slivers to sauce and serve
